Ingredients

  • 1 large Spaghetti Squash
  • 2 tablespoons Salted Butter

For the Honey Ginger Glaze

  • 2 tablespoons freshly grated Ginger
  • 2 tablespoons Unsalted Butter
  • 1 tablespoon Chicken Base See Note below
  • 1 cup Honey
  • 1/2 cup Brown Sugar
  • 1 cup Water
  • 2 tablespoons Cornstarch

Instructions

  • Preheat oven to 350°F.
  • Cut squash in half lengthwise and remove seeds.
  • Place cut side down in a large baking pan.
  • Bake until skin is tender and strands can be loosened easily with a fork.
  • Remove from oven and set aside briefly.
  • In a sauté pan, cook ginger with butter until tender.
  • Add chicken base, honey, and brown sugar.
  • Stir together water and cornstarch.
  • Add to ginger mixture and simmer until slightly thickened.
  • Scrape squash into strands and place in a shallow dish.
  • Top with salted butter.
  • Spoon desired amount of glaze over the squash.
  • Serve warm.
NOTE
Chicken base is concentrated paste that can typically be found in many larger supermarkets and gourmet stores.
