Ingredients

  • 2 heads Romaine Lettuce washed well, dried and torn in bite-sized pieces
  • 3 cloves Garlic
  • 2 fillets of Anchovies
  • 1/4 teaspoon Salt
  • 1 hardboiled Egg Yolk
  • 1 teaspoon Worcestershire sauce
  • 4 tablespoons Extra Virgin Olive Oil
  • 4 tablespoons Dijon Mustard
  • Juice of 1 medium Lemon
  • 2 grilled boneless, skinless Chicken Breasts cut into 1/2-inch wide slices
  • 1/2 cup Cheese Croutons
  • 1 ounce grated Parmesan Cheese
  • Freshly ground Black Pepper to taste

Instructions

  • Place lettuce in a large serving bowl.
  • Place sliced chicken over top of lettuce.
  • In another large mixing bowl, add garlic and anchovies. Mash with a fork until paste-like.
  • To garlic mash, add salt, egg yolk, Worcestershire sauce, olive oil, Dijon mustard and lemon juice. Mix well with a whisk.
  • Pour dressing over lettuce. Toss lightly to mix.
  • Place chicken pieces over lettuce.
  • Sprinkle croutons, cheese and pepper over top.
