Ingredients

Peach Cobbler Filling

  • 2 cups diced Peaches fresh or canned and well drained
  • 2 tablespoons Unsalted Butter
  • 1/4 cup Light Brown Sugar
  • 1 tablespoon Granulated Sugar
  • 1 tablespoon Fresh Lemon Juice
  • 1 teaspoon Pure Vanilla Extract or Vanilla Bean Paste
  • 1/2 teaspoon Ground Cinnamon
  • 1/8 teaspoon Ground Nutmeg
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water
  • 1/3 cup Graham Cracker Crumbs

Rolls

  • 8 Egg Roll Wrappers or Large Spring Roll Pastry Wrappers
  • 2 tablespoons Water for sealing
  • Vegetable Oil for frying

Cinnamon Coating

  • 1/4 cup Granulated Sugar
  • 1 teaspoon Ground Cinnamon

Instructions

Prepare the Peach Filling

  • Add peaches, butter, brown sugar, granulated sugar, lemon juice, vanilla, cinnamon and nutmeg to a medium saucepan.
  • Cook over medium heat for 4 to 5 minutes, stirring occasionally, until the peaches soften and release some juice.
  • Stir cornstarch and water together in a small bowl.
  • Pour into the peach mixture.
  • Cook for 1 to 2 minutes, stirring constantly, until thickened.
  • Remove from heat.
  • Stir in graham cracker crumbs.
  • Transfer filling to a bowl.
  • Cool completely.

Assemble the Rolls

  • Place one wrapper on a work surface with one corner pointing toward you.
  • Spoon about 2 tablespoons cooled peach filling just below the center.
  • Fold the bottom corner over the filling.
  • Fold the two side corners inward.
  • Roll tightly toward the remaining corner.
  • Brush the final corner lightly with water and press to seal.
  • Repeat with the remaining wrappers and filling.

Fry the Rolls

  • Combine sugar and cinnamon in a shallow bowl.
  • Pour about 2 inches vegetable oil into a heavy saucepan or Dutch oven.
  • Heat oil to 350°F.
  • Fry rolls in small batches for 2 to 3 minutes, turning occasionally, until crisp and deep golden brown.
  • Transfer to a wire rack or paper towel-lined plate.
  • Let cool for about 1 minute.
  • Roll or sprinkle the warm pastries lightly with cinnamon sugar.
  • Serve warm.
Notes
  • For the easiest version: Use canned sliced peaches, drain them thoroughly and dice them. Their soft texture is particularly well suited to this filling.
  • For air-frying: Brush the assembled rolls lightly with oil and air-fry at 375°F for about 7 to 9 minutes, turning once, until crisp and golden.
