Ingredients

  • 2 tablespoons Unsalted Butter divided
  • 1 large Yellow Onion cut into 1/4-inch-thick slices
  • 1/2 teaspoon Kosher Salt divided
  • 1 tablespoon Vegetable Oil
  • 1 pound thinly shaved Angus Ribeye Steak
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • 1/4 teaspoon freshly ground Black Pepper
  • 1/4 teaspoon Smoked Paprika
  • 1/4 teaspoon Granulated Sugar
  • 8 ounces thinly sliced Cooper Sharp White American Cheese
  • 4 Amoroso Sesame Seed Sub Rolls split

Instructions

  • Melt 1 tablespoon butter in a large skillet over medium-low heat.
  • Add the onion and 1/4 teaspoon salt. Cook for 18 to 22 minutes, stirring occasionally, until very soft and golden. Transfer to a plate.
  • Increase the heat to medium-high. Add the vegetable oil.
  • Spread the steak across the hot skillet. Cook for 45 seconds without stirring.
  • Chop and turn the steak with two spatulas. Season with the garlic powder, onion powder, black pepper, smoked paprika, sugar and remaining salt.
  • Cook for 2 to 3 minutes, until the steak is browned but still juicy.
  • Return the onions to the skillet. Toss with the steak and divide the mixture into 4 portions.
  • Place the cheese over each portion. Cover the skillet and cook for 45 to 60 seconds, until melted.
  • Melt the remaining butter on a clean griddle or skillet. Toast the rolls cut-side down until lightly golden.
  • Scoop one portion of steak, onions and cheese into each toasted roll.
  • Serve immediately while hot and creamy, adding a little extra black pepper or salt to taste.
Substitutions & Notes
  • Cooper Sharp can be difficult to find outside the Mid-Atlantic region. Full-fat white American cheese sliced at a supermarket deli provides the closest widely available substitute.
  • Amoroso rolls may be ordered online or found in some restaurant-supply stores. When unavailable, use soft 7-inch sesame sub rolls with a lightly chewy crust rather than firm French bread.
