Ingredients

  • Two 10-ounce packages frozen chopped Spinach
  • 1 cup canned diced Artichoke Hearts
  • 1/2 cup shredded or grated Parmesan Cheese
  • Two 10-ounce jars Alfredo Sauce or 20 ounces homemade Alfredo Sauce of choice
  • 1 teaspoon Tabasco Sauce or other Louisiana-Style Hot Sauce of choice
  • 1/2 teaspoon freshly squeezed Lemon Juice

Instructions

  • Thaw the spinach. Place in a colander to drain, When drained, squeeze by hand to further dry spinach. Set aside briefly.
  • Drain artichoke hearts. Cut the into small pieces.
  • Place prepared spinach and artichoke hearts into a medium microwaveable mixing bowl. Add Parmesan cheese, Alfredo sauce, Tabasco sauce and lemon juice. Mix well.
  • Place in microwave and heat on high for about 3 minutes, until hot and starting to bubble.
  • Carefully remove bowl from microwave. Stir mixture.
  • Spoon mixture into a microwaveable serving bowl or bowls.
  • Place back in microwave and heat for about 1 - 2 minutes until again hot and bubbling.
  • Serve hot with tortilla chips.
