Ingredients

  • 5 tablespoons Sugar
  • 4 tablespoons Butter melted
  • 1/2 cup Buttermilk
  • 1/4 cup Milk
  • 4 tablespoons Yellow Cornmeal
  • 3/4 cup Self-Rising Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt

Instructions

  • Preheat oven to 400°F.
  • Add all ingredients to bowl in order listed. Beat well until it looks like a smooth cake batter.
  • Divide batter between wells in a muffin tin. Fill any empty wells 1/2 full with water.
  • Place in oven and bake 16 to 18 minutes or until tester inserted into centers comes out clean.
  • Let cool few minutes in pan. Remove with two forks.
