- 2 pounds boneless, skinless Chicken Breasts, cut into sixteen 2-ounce cubes
- 1 1/2 tablespoons Kosher Salt
- 1/3 cup freshly squeezed Lemon Juice
- 3 tablespoons Red Wine
- 1/3 cup Olive Oil
- 1 tablespoon chopped fresh Thyme
- 1/2 tablespoon chopped fresh Rosemary
- 1/8 teaspoon ground Cumin
- 16 thin slices Apple Wood-Smoked Bacon
- 16 leaves fresh Sage
- Freshly ground Black Pepper to taste
Soak 8 bamboo skewers in water for at least 30 minutes.
Season chicken cubes with the salt.
Combine lemon juice and wine in a large mixing bowl.
Slowly whisk in the olive oil.
Mix in thyme, rosemary and cumin.
Place chicken bowl and allow to marinate for a few minutes.
Place a slice of bacon flat on a clean surface. Place a cube of chicken on top of slice. Place a sage leaf on top of the cube.
Wrap chicken in the bacon.
Sprinkle cracked pepper on bacon.
Repeat with all remaining chicken cubes.
Slide 2 bacon-wrapped cubes onto each skewer.
Place skewers on heated charcoal grill. Cook, turning often, until bacon is crisp and chicken is cooked to 165 degrees, about 10 minutes.
