- Four 15-ounce cans Black Beans
- 3 slices Bacon roughly chopped
- 1 tablespoon Olive Oil
- One 12-ounce bottle Beer of choice
- 1/2 cup Water
- 1 tablespoon Dry Sherry
- 3/4 cup diced Onions
- 1/2 cup diced Green Peppers
- 2 tablespoons Garlic
- 1/4 teaspoon Ground Cumin
- 2 teaspoons Tabasco Sauce
- Adobo Seasoning to taste
- Salt and freshly ground Black Pepper to taste
Heat oil in a pot on medium heat.
Add chopped bacon. Sauté 1 minute.
Add peppers, onions and garlic. Sauté about 2 minutes.
Add beer and Tabasco sauce. Increase heat and bring to a boil.
Add 3 cans of beans with their juice. Bring back to a boil.
Using a handheld kitchen blender (immersion blender), purée soup until smooth.
Add remaining 1 can of beans. Bring back to a boil.
Add Sherry wine.
Taste. Add Adobo seasoning, salt and pepper, to taste.
Serve hot with sour cream or steamed rice.
