Jollibee Chickenjoy Recipe

Ingredients

  • 2 fryer chickens cut up into 8 pieces
  • Jollibee Chicken Marinade (Recipe and technique below)
  • 6 cups Crisco Shortening
  • 1 Egg well beaten
  • 2 cups Milk
  • 2 cups Flour
  • 2 teaspoons freshly ground Black Pepper
  • 3 tablespoons Salt
  • 1 teaspoon MSG
  • 1/8 teaspoon Garlic Powder
  • 1 dash Paprika
  • 1/2 teaspoon Five Spice Powder or Ngohiong Powder

Instructions

  • Place shortening into the pressure cooker.
  • Place over high heat and heat until the shortning reaches 400°F.
  • In a small bowl, combine the egg and milk.
  • In a separate bowl, combine flour, pepper, salt, MSG, garlic powder and paprika.
  • Dip each piece of chicken into the milk mixture until fully moistened.
  • Roll the moistened chicken in the flour mixture until well-coated.
  • In groups of four or five, drop the covered chicken pieces into the shortening and lock the lid.
  • When pressure start to builds up, cook for 10 minutes.
  • Remove and place chicken on a paper towel or a rack to drain the excess oil.
  • Enjoy.

To make ChickenJoy without a pressure cooker -

  • Follow directions for marinating and breading the chicken.
  • Heat oil in the deep fryer or deep frying pan to about 350°F.
  • Carefully place breaded chicken pieces into the hot oil. Depending on the size of your fryer and the size of your chicken, you can put 4 to 5 pieces per batch. Don't overcrowd the fryer to avoid the fried chicken becoming soggy and loosing its crispiness.
  • Cook for about 15 to 20 minutes until chicken is done and breading is browned and crispy.
  • Remove and place chicken on a paper towel or a rack to drain the excess oil.
  • Enjoy.
