Ruby Tuesday
Ruby Tuesday began in 1972 near the University of Tennessee campus and grew into a casual American bar-and-grill chain known for burgers, ribs, seafood and its signature Garden Bar.
The restaurant has continued to update that familiar formula with newer flavors and dining trends while keeping approachable American food at the center of the menu. In 2026, Ruby Tuesday introduced one of its biggest menu expansions in years, adding bowls, oversized entrées, sandwiches, appetizers, cocktails and desserts.
The Hawaiian Ahi Tuna Bowl represented the lighter side of that effort, bringing ahi tuna and a colorful rice-bowl format into the traditional casual-dining mix.
Ruby Tuesday Goes Hawaiian with Ahi Tuna
The Hawaiian Ahi Tuna Bowl first appeared as part of Ruby Tuesday’s limited-time summer menu in June 2026. The restaurant describes ahi tuna paired with mango, cucumber, carrot, scallions and tomato over chilled rice, then finished with Hawaiian BBQ sauce and crisp wontons.
The combination borrows from modern poke-bowl ideas without trying to be a traditional Hawaiian poke preparation. Sweet fruit, cool vegetables and chilled rice keep the bowl fresh, while the sauce and fried wontons provide the richer restaurant-style finish.
