Noodles & Company Pasta Fresca Recipe
Ingredients
Fresca Sauce
- 1/4 cup fresh peeled Garlic
- 2 teaspoons kosher Salt
- 1/4 cup Balsamic Vinegar
- 1/4 cup sweet White Wine
- 1 cup Extra Virgin Olive Oil
Pasta and Vegetables
- 2 1/2 cups Farfalle Pasta
- 2 teaspoons Extra Virgin Olive Oil
- 1/4 cup cubed Roma Tomatoes
- 1 tablespoon diced Red Onion
- Salt and freshly ground Black Pepper to taste
- 1 ounce fresh Baby Spinach
- Fresh Parsley chopped
- Grated Parmesan or crumble Feta Cheese to serve
Instructions
- Prepare pasta according to package directions. Drain. Set aside.
- In a large bowl, add all ingredients for the fresca sauce. Mix well. Set aside.
- In a pan, add all pasta ingredients except spinach.
- Place pan over medium heat.
- Sear noodles, stirring occasionally, until steaming hot and onions are beginning to get tender.
- Add spinach and 1 ounce Fresca Sauce. Toss to combine and heat through.
- Transfer to a serving dish or bowl.
- Sprinkle with parsley.
- Serve with Parmesan or Feta cheese, to top.
