Dinosaur Bar-B-Que Churrasco Steak Recipe
Ingredients
Steaks
- Four 10 - 12-ounce Strip Steaks
- 1 cup Mojito Marinade store bought or homemade
Dinosaur Bar-B-Que Churrasco Steak Sauce
- 1 medium bunch fresh Italian Parsley
- 10 - 12 large cloves Garlic coarsely chopped
- 3 - 4 tablespoons freshly squeezed Lemon Juice
- 1 teaspoon Red Pepper Flakes
- 2 teaspoons Salt
- 1 teaspoon ground Cumin
- 1 teaspoon dried Oregano
- 1 cup Extra Virgin Olive Oil
Instructions
Steaks
- Remove the bootstrap tendon sometimes found on the outside edge of the steaks, so they won't curl when you cook them.
- Place steaks into a large shallow dish.
- Pour marinade over steaks. Turn to coat.
- Store, covered, in the refrigerator, overnight to marinate.
Dinosaur Bar-B-Que Churrasco Steak Sauce
- Pick off the parsley leaves to make a packed cup.
- Put the leaves in a food processor or blender.
- Add garlic, lemon juice, red pepper flakes, salt, cumin and oregano. Process to a paste, scraping down the bowl several times.
- With the processor running, slowly dribble in the olive oil until fully blended. Set aside.
Grill
- Remove the steaks from the marinade. Pat dry.
- Place on grill over hot coals. Grill until medium rare, or to your desired doneness (see chart below).
- When done, place steaks on serving plates.
- Spoon Dinosaur Bar-B-Que Churrasco Steak Sauce over each steak.
- Serve hot.

Steak Degrees of Doneness
- Rare: 95 – 105°F. Cool deep red center.
- Medium Rare: 115 – 125°F. Warm red center with a hint of pink.
- Medium: 130 – 140°F. Warm pink center.
- Medium Well: 150 – 160°F. Some pink in the center but mostly cooked through.
- Well: 165 – 175°F. No pink, cooked all the way through.
