Corner Bakery Cafe Chopped Salad Recipe
Ingredients
- 1 cup chopped or shredded fully cooked Chicken Meat
- 2 slices Bacon cooked and crumbled
- 1 Ripe Avocado
- 1/4 cup crumbled Bleu Cheese
- 1 medium Tomato chopped
- 1 Green Onion sliced thin
- 2 cups Iceberg and Romaine Lettuces chopped

Instructions
- Starting at the top, with a very sharp knife, cut down into each avocado until you hit the pit. Cut completely around the avocado, top to bottom, touching the pit the entire time.
- Pull the two halves of the avocado apart and remove the pit with a spoon.
- Use the spoon to scoop the avocado out of the skin.
- Chop the avocado.
- Place all ingredients, except dressing, in a large mixing bowl. Toss gently to mix well.
- Dish out to individual serving bowls.
- Serve with Corner Bakery Cafe Sweet and Spicy Vinaigrette, to dress.
