Anthony's Fish Grotto Grilled Shrimp Recipe
Equipment
- 8 Skewers
Ingredients
- 6 cups Vegetable Medley (Broccoli, Carrots, Zucchini, Cauliflower)
- Sprinkle Garlic Parsley Spice
- 48 medium Shrimp about 1 1/4 pounds, shelled, cleaned and deveined
- 2 Onions cut into 16 wedges
- 2 Green Bell Peppers cored and cut into 16 wedges
- 3 tablespoons Honey Mustard Sauce
- 6 cups cooked Rice
Instructions
- Steam veggies. Sprinkle with garlic parsley spice and toss to coat. Set aside and keep warm.
- Thread each skewer with the following, in this order - Onion, 2 shrimp, bell pepper, 2 shrimp, bell pepper, 2 shrimp, onion.
- Place skewers on a hot grill and cook, basting with honey mustard glaze, for 3 minutes on each side, or just until shrimp turn pink. Do not overcook.
- Put rice on center of the plate. Top with 1 or 2 shrimp skewers. Evenly distribute veggies around the rice in a circle.
