Ingredients

  • 6 cups Vegetable Medley (Broccoli, Carrots, Zucchini, Cauliflower)
  • Sprinkle Garlic Parsley Spice
  • 48 medium Shrimp about 1 1/4 pounds, shelled, cleaned and deveined
  • 2 Onions cut into 16 wedges
  • 2 Green Bell Peppers cored and cut into 16 wedges
  • 3 tablespoons Honey Mustard Sauce
  • 6 cups cooked Rice

Instructions

  • Steam veggies. Sprinkle with garlic parsley spice and toss to coat. Set aside and keep warm.
  • Thread each skewer with the following, in this order - Onion, 2 shrimp, bell pepper, 2 shrimp, bell pepper, 2 shrimp, onion.
  • Place skewers on a hot grill and cook, basting with honey mustard glaze, for 3 minutes on each side, or just until shrimp turn pink. Do not overcook.
  • Put rice on center of the plate. Top with 1 or 2 shrimp skewers. Evenly distribute veggies around the rice in a circle.
