Recently we asked you, our readers, to send in some of their favorite family recipes. When we decided to make one of the recipes we received we ran into a problem.  They all look SO GOOD!  But this one, Cindy’s Grandmother’s 1950’s Cold Cheese Dip, was the one we chose it to make and highlight. Boy are we — Especially Alton — Glad we did!

Thank you so much to everyone who has sent us recipes.  We look forward to trying them all and sharing them with everyone in the Premium Section of the Cookbook-a-Month Club.

But which one to make first?

James came up with the solution.  Don’t choose — just make the first one we received.  That would be the fairest thing to do.

It also proved to be an excellent choice for a totally different reason. As many of you know, Basketball is King here in Kentucky and the entire month of March is a Holiday — because it is March Madness time.  (March Madness is the college basketball tournament time for those of you who sadly don’t follow B-Ball.)

So we naturally had a basketball-watching party to go to on Saturday Night.

Perfect!

Now if only it turned out to be good…

Not to worry.  I say this in all honesty —  It is really, REALLY good.

The ingredients — there are only 4 of them — look too simple to be good.  But somehow it all works together.

Alton says this one is a keeper.  We literally had to fight him to get it in the Fridge.  Notice that in the photo at the top of this page the dip is on a tiny Frito chip?  Alton ate ALL of the Tostito Scoops before we could get a picture. As we said above we wanted to cool it down (as Cindy suggests) to give the flavors time to meld so we could take it to a Basketball-watching party later.  I guess the 1/2 we have left after Uncle A got done is better than none.  LOL

By the way – EVERYONE who tried the dip at the party LOVED it.  Even those few who claimed to not like Pepperonis.  And our team, The Louisville Cardinals won the game and the tournament.  So it was a GREAT night all around.

Cindy says… “This is my grandmothers 1950’s recipe for a Cold Cheese Dip.  I love it, hope you will too!”

Cindy's Grandmother's 1950's Cold Cheese Dip Recipe

EVERYONE who tried the dip at the party LOVED it. Even those few who claimed to not like Pepperonis.

Ingredients

  • 2 pound block of Velveeta Cheese Do NOT use preshredded as it is too dry
  • 1 large Onion finely minced (We used a sweet Vidalia Onion - James)
  • 6 Pepperoni Peppers deseeded and finely minced
  • 1 quart jar of Mayonnaise Cindy says Hellman's is best but, as always, we used Duke's - James

Instructions

  • Shred the Velveeta cheese (Cindy says, "I know it is very hard to shred the soft Velveeta, but it must be done." Mark agrees, that, Yes, it is hard!)
  • Finely mince the onions and pepperoni peppers
  • Combine cheese, peppers, onions and mayonnaise in a large bowl. You may have to use you hands to do it. (Cindy says, "It will resemble pimento cheese" Mark says, "I left several chunks of cheese in the mixture and it didn't hurt it at all.)
  • Keep your Uncle from eating it all - if you can. The is a Very Important -- and Hard to Achieve -- Step!
  • Refrigerate.
  • Serve when well-chilled.
