Cindy's Grandmother's 1950's Cold Cheese Dip Recipe
EVERYONE who tried the dip at the party LOVED it. Even those few who claimed to not like Pepperonis.

- 2 pound block of Velveeta Cheese Do NOT use preshredded as it is too dry
- 1 large Onion finely minced (We used a sweet Vidalia Onion - James)
- 6 Pepperoni Peppers deseeded and finely minced
- 1 quart jar of Mayonnaise Cindy says Hellman's is best but, as always, we used Duke's - James
Shred the Velveeta cheese (Cindy says, "I know it is very hard to shred the soft Velveeta, but it must be done." Mark agrees, that, Yes, it is hard!)
Finely mince the onions and pepperoni peppers
Combine cheese, peppers, onions and mayonnaise in a large bowl. You may have to use you hands to do it. (Cindy says, "It will resemble pimento cheese" Mark says, "I left several chunks of cheese in the mixture and it didn't hurt it at all.)
Keep your Uncle from eating it all - if you can. The is a Very Important -- and Hard to Achieve -- Step!
Refrigerate.
Serve when well-chilled.
