Real Cooking Tip - How to Chop an Onion Fast [separator top=”40″ style=”shadow”]

This is an excellent way to chop an onion quickly.  And the more quickly you do it, the less time it has to irritate your eyes.

HOWEVER…

The real key to not crying when you are cutting an onion — slow or fast —  is to use an extremely sharp knife.

You want to separate the cells of the onions away from each other when you cut it and you do not want to break the cell walls when you cut through.  “Crushing” the cell walls will rapidly release a gas called propanethial oxide, which converts a percentage of the water on the surface of your eyes to sulfenic acid.   This is what causes the irritation and tears.

Sharp knives help keep the cell walls intact and prevent this reaction from happening.

So always make sure your knives are sharp.
