Ingredients

  • 6 Anchovy Fillets
  • 1 heaping tablespoon Dijon-Style Mustard
  • 1 teaspoon Worcestershire Sauce
  • 2 Egg Yolks
  • Freshly squeezed Juice of 1/2 Lemon extracted by squeezing it through a cloth
  • 1/2 cup Olive Oil
  • 5 small or 3 large cloves Garlic peeled and halved
  • 1 to 2 heads crisp Romaine Lettuce cut into half-dollar-sized pieces
  • Croutons store bought or homemade, of choice, to taste
  • 3/4 cup freshly grated Parmesan Cheese
  • More Anchovy Fillets to taste, to serve
  • Freshly ground Black Pepper to taste

Instructions

  • In large wooden bowl, mash anchovies. Scrape from bowl and set aside.
  • In small saucepan, add mustard, Worcestershire sauce, egg yolks and lemon juice.
  • Place over medium heat. Cook, stirring constantly, until mixture starts to bubble and temperature reaches 160°F. Remove from heat and allow to cool.
  • When cooled, add cooked mixture, oil and garlic to a jar. Shake until mixture is frothy.
  • Add dressing to anchovy scented wooden bowl.
  • Add lettuce, croutons and cheese. Toss only as long as it takes to mix dressing with lettuce. Place immediately on cool or chilled plates, topped with additional anchovies, if desired.
  • Sprinkle with freshly ground pepper.
  • Serve cold.
