Ingredients

  • 1 tablespoon Paprika
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt divided
  • 1/4 teaspoon freshly ground Black Pepper
  • 2 tablespoons Peanut Oil
  • 6 Potatoes (about 2 1/2 pounds), washed and scrubbed, with skin left on

Instructions

  • Preheat oven to 425 degrees.
  • In a large resealable plastic bag, combine paprika, chili powder, 1/2 teaspoon salt and pepper. Seal bag and shake to mix. Set aside.
  • Pour peanut oil into a large bowl.
  • Cut each potato in half. Then cut each half into 4 flat wedges.
  • Add potatoes to peanut oil. Toss to coat.
  • Place oiled potatoes in bag with seasoning. Close tightly. Shake to coat well.
  • Spread seasoned potatoes in a single layer on a large rimmed baking sheet.
  • Place in preheated oven. Bake 20 to 22 minutes, or until fork-tender.
  • Place cooked potatoes on a serving plate and sprinkle with remaining 1/2 teaspoon salt.
  • Serve hot.
