Ingredients

  • 2 cups Buttermilk
  • 1 teaspoon Salt
  • 1/2 teaspoon freshly ground Black Pepper
  • 1 pound Chicken Breast cut into small pieces
  • 1 cup All-Purpose Flour
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Salt
  • Vegetable Oil for frying
  • 1/4 cup Honey
  • 2 tablespoons Yellow Mustard
  • 1 tablespoon Mayonnaise
  • 1 tablespoon finely chopped Pickled Jalapeños
  • 1 teaspoon Jalapeño Brine
  • 4 Small Flour Tortillas
  • 1/2 cup Shredded Lettuce
  • 1/2 cup Shredded Cheddar Cheese

Instructions

  • Combine buttermilk, salt, and black pepper in a bowl. Add chicken and marinate 15 minutes.
  • Mix flour, garlic powder, paprika, and salt in a separate bowl.
  • Heat vegetable oil in a skillet to 350 degrees.
  • Remove chicken from marinade, dredge in flour mixture, and fry until golden and cooked through. Drain on paper towels.
  • Stir honey, mustard, mayonnaise, jalapeños, and jalapeño brine in a bowl until smooth.
  • Warm tortillas until flexible.
  • Place chicken in the center of each tortilla. Top with sauce, lettuce, and cheese.
  • Fold edges inward to form a tight wrap.
  • Place seam-side down in a dry skillet and cook until golden and sealed. Flip and toast the other side.
  • Serve warm.
