- 2 cups Buttermilk
- 1 teaspoon Salt
- 1/2 teaspoon freshly ground Black Pepper
- 1 pound Chicken Breast cut into small pieces
- 1 cup All-Purpose Flour
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon Paprika
- 1/2 teaspoon Salt
- Vegetable Oil for frying
- 1/4 cup Honey
- 2 tablespoons Yellow Mustard
- 1 tablespoon Mayonnaise
- 1 tablespoon finely chopped Pickled Jalapeños
- 1 teaspoon Jalapeño Brine
- 4 Small Flour Tortillas
- 1/2 cup Shredded Lettuce
- 1/2 cup Shredded Cheddar Cheese
Combine buttermilk, salt, and black pepper in a bowl. Add chicken and marinate 15 minutes.
Mix flour, garlic powder, paprika, and salt in a separate bowl.
Heat vegetable oil in a skillet to 350 degrees.
Remove chicken from marinade, dredge in flour mixture, and fry until golden and cooked through. Drain on paper towels.
Stir honey, mustard, mayonnaise, jalapeños, and jalapeño brine in a bowl until smooth.
Warm tortillas until flexible.
Place chicken in the center of each tortilla. Top with sauce, lettuce, and cheese.
Fold edges inward to form a tight wrap.
Place seam-side down in a dry skillet and cook until golden and sealed. Flip and toast the other side.
Serve warm.
