Ingredients

Pasta Dough

  • 2 cups All-Purpose Flour
  • 2 large Eggs
  • 1/2 teaspoon Salt
  • 1 teaspoon Olive Oil
  • Water as needed

Filling

  • 1/2 pound Mild or Spicy Italian Sausage casing removed
  • 1/2 cup Ricotta Cheese
  • 1/4 cup grated Parmesan Cheese
  • 1 teaspoon chopped fresh Basil
  • 1/4 teaspoon freshly ground Black Pepper to taste
  • 1/8 teaspoon Salt

Sauce

  • 2 tablespoons Unsalted Butter
  • 1 teaspoon chopped Garlic
  • 1 cup Heavy Cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon crushed Red Pepper Flakes
  • 1/4 teaspoon Salt
  • 1/8 teaspoon freshly ground Black Pepper to taste

Garnish

  • Extra grated Parmesan Cheese
  • Extra freshly chopped Basil

Instructions

Pasta Dough

  • Place dry flour on a clean surface. Form into a mound and create a well in the center.
  • Crack eggs into the well.
  • Add salt and olive oil.
  • Gradually mix with a fork, incorporating the flour.
  • Knead the dough for 8 - 10 minutes until smooth.
  • Wrap in plastic and rest at room temperature for 30 minutes.

Filling

  • Place sausage in a medium skillet. Break up a bit with a wooden spoon.
  • Place skillet over medium heat. Cook, stirring and breaking up meat completely, until meat is browned.
  • Drain off excess fat. Transfer to a bowl.
  • Add ricotta, Parmesan, basil, salt and black pepper. Mix well. Set aside.

Pasta

  • Roll out the rested pasta dough into 2 thin sheets.
  • Spoon small portions of the sausage mixture onto one sheet, leaving about 1 inch between each.
  • Lay another sheet over the top, press around the filling to seal. Cut into 1-inch squares. Use a fork to crimp the edges.
  • Bring a large pot of salted water to a gentle boil.
  • Add pasta and cook for 3 - 4 minutes until tender and floating.
  • Drain carefully.

Sauce

  • Place a large skillet over medium heat.
  • Add butter and cook until melted.
  • Add garlic. Sauté until fragrant, about 1 minute.
  • Stir in heavy cream, Parmesan cheese, red pepper flakes, salt and black pepper. Simmer for 2 - 3 minutes until slightly thickened.

Combine and Serve

  • Add cooked quadratini pasta to the sauce, tossing gently to coat.
  • Plate and garnish with extra Parmesan and fresh basil.
  • Serve warm.
