Po' Folks Chicken and Dumplings Recipe

Ingredients

Chicken and Broth

  • 1 whole Chicken (about 4 pounds)
  • 10 cups Water
  • 1 Onion quartered
  • 2 Celery Stalks roughly chopped
  • 1 teaspoon Salt
  • 1/2 teaspoon freshly ground Black Pepper

Dumplings

  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 3/4 cup Whole Milk
  • 2 tablespoons melted Butter

Instructions

  • Place chicken, water, onion, celery, salt, and pepper in a large pot.
  • Place over medium high heat and bring to a boil. Reduce heat and simmer until chicken is very tender, about 1 hour.
  • Remove chicken from pot.
  • Discard skin and bones.
  • Shred meat.
  • Return shredded chicken to the pot. Bring broth back to a gentle simmer.
  • In a bowl, combine flour, baking powder and salt.
  • Stir in milk and melted butter until a soft dough forms.
  • Drop dumpling dough by spoonfuls into simmering broth.
  • Cover and cook without stirring until dumplings are cooked through, about 15 - 20 minutes.
  • Stir gently once before serving.
  • Serve hot in bowls.
