Po' Folks Chicken and Dumplings Recipe

Chicken and Broth
- 1 whole Chicken (about 4 pounds)
- 10 cups Water
- 1 Onion quartered
- 2 Celery Stalks roughly chopped
- 1 teaspoon Salt
- 1/2 teaspoon freshly ground Black Pepper
Dumplings
- 2 cups All-Purpose Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Salt
- 3/4 cup Whole Milk
- 2 tablespoons melted Butter
Place chicken, water, onion, celery, salt, and pepper in a large pot.
Place over medium high heat and bring to a boil. Reduce heat and simmer until chicken is very tender, about 1 hour.
Remove chicken from pot.
Discard skin and bones.
Shred meat.
Return shredded chicken to the pot. Bring broth back to a gentle simmer.
In a bowl, combine flour, baking powder and salt.
Stir in milk and melted butter until a soft dough forms.
Drop dumpling dough by spoonfuls into simmering broth.
Cover and cook without stirring until dumplings are cooked through, about 15 - 20 minutes.
Stir gently once before serving.
Serve hot in bowls.
