- One 14-ounce can Diced Tomatoes
- 1 large Roma Tomato seeded and diced
- 1 clove Garlic chopped
- 1/2 White Onion chopped
- 1 Jalapeño stem removed, seeded and chopped
- 1/3 cup fresh Cilantro cleaned and stems removed
- 1 teaspoon Cayenne Powder
- 1 3/4 teaspoons Cumin
- 2 teaspoons Jalapeño Juice from a jar of Pickled Jalapeños
- 1 teaspoon Sugar
- 1 tablespoon freshly squeezed Lime Juice
- 1 teaspoon Salt
Pour entire can of tomatoes with juice into a food processor.
Add all remaining ingredients.
Process for 10 to 12 seconds. Check consistency. Process more if desired.
Taste. Add more salt or other ingredients, to taste, if needed.
Store in a tightly sealed container, in the refrigerator, to chill and allow the flavors to develop for at least 2 hours or until ready to serve.
