Ingredients

  • One 14-ounce can Diced Tomatoes
  • 1 large Roma Tomato seeded and diced
  • 1 clove Garlic chopped
  • 1/2 White Onion chopped
  • 1 Jalapeño stem removed, seeded and chopped
  • 1/3 cup fresh Cilantro cleaned and stems removed
  • 1 teaspoon Cayenne Powder
  • 1 3/4 teaspoons Cumin
  • 2 teaspoons Jalapeño Juice from a jar of Pickled Jalapeños
  • 1 teaspoon Sugar
  • 1 tablespoon freshly squeezed Lime Juice
  • 1 teaspoon Salt

Instructions

  • Pour entire can of tomatoes with juice into a food processor.
  • Add all remaining ingredients.
  • Process for 10 to 12 seconds. Check consistency. Process more if desired.
  • Taste. Add more salt or other ingredients, to taste, if needed.
  • Store in a tightly sealed container, in the refrigerator, to chill and allow the flavors to develop for at least 2 hours or until ready to serve.
