- 1 1/4 pounds Cheese Tortellini
- Chopped fresh Parsley
- Freshly grated Parmesan Cheese
Tomato Basil Cream Sauce
- 2 cups peeled crushed drained Plum Tomatoes
- 1 Chicken Bouillon Cube mashed
- 4 teaspoons dried Basil
- 2 teaspoons chopped fresh Parsley
- 1/4 teaspoon freshly ground Black Pepper
- 1/4 cup Olive Oil
- 2 large cloves Garlic minced
- 2 cups Heavy Cream
- 4 tablespoons freshly grated Parmesan Cheese
Prepare pasta according to package directions. Drain. Set aside.
Chop tomatoes in chunky pieces. Place tomatoes into a medium cooking pot.
Place pot over low heat.
Add bouillon, basil, 2 teaspoons chopped fresh parsley and pepper. Stir to mix.
Pour oil into a medium skillet. Place over medium heat.
When oil is hot and shimmering, add garlic. Sauté until just white.
Add garlic to sauce. Increase heat slightly and bring just to a simmer.
When sauce is hot, add heavy cream to a non-aluminum skillet. Place over medium heat and bring to a slow boil.
Add hot tomato sauce. Stir.
Add 4 tablespoons freshly grated Parmesan cheese. Stir well to melt cheese.
Add tortellini into the pan of tomato basil cream sauce. Stir to mix and heat to eating temperature.
Serve, topped with chopped parsley and Parmesan cheese.
