- 1 Frozen Deep-Dish Pie Shell
Lemon Filling
- 1 1/4 cups Sugar divided use
- 6 tablespoons Cornstarch
- 1/2 teaspoon Salt
- 1 1/4 cups Water
- 2 tablespoons Butter
- 2 teaspoons grated Lemon Peel
- 4 - 5 drops Yellow Food Coloring optional
- 1/2 cup freshly squeezed Lemon Juice
Cream Cheese Filling
- 11 ounces Cream Cheese softened to room temperature
- 3/4 cup Powdered Sugar
- 1 1/2 cups Whipped Cream or Non-Dairy Whipped Topping
- 1 tablespoon freshly squeezed Lemon Juice
Lemon Filling
In a small bowl, combine 3/4 cup sugar, cornstarch and salt. Mix.
Slowly add water, stirring until smooth.
Pour into a cooking pot and place over medium-high heat. Bring to a boil. Reduce heat.
Add remaining sugar. Cook and stir for 2 minutes or until thickened and bubbly. Remove from the heat.
Stir in butter, lemon peel and food coloring, if desired.
Gently stir in 1/2 cup lemon juice.
Cool to room temperature, about 1 hour.
Cream Cheese Filling
Place cream cheese and powdered sugar in a large bowl. Beat with a mixer until smooth.
Fold in whipped cream and 1 tablespoon lemon juice.
Remove 1/2 of mixture to a bowl. Cover and place in the refrigerator to chill.
Spread remaining cream cheese mixture into pie shell.
Top with lemon filling.
Cover and place in the refrigerator overnight.
Remove pie and reserved cream cheese filling from refrigerator.
Place cream cheese mixture in a pastry bag with a #21 star tip. Pipe stars onto pie.
Return pie to refrigerator until ready to serve. If storing longer than 3 hours, cover with plastic wrap or place in a covered pie container.
Serve cold or at room temperature.
