- 2 pounds Rice Noodles
- 12 ounces Broccoli Florets cut into bite-sized pieces
- 6 ounces Carrots shredded
- 4 ounces Napa Cabbage shredded
- 2 ounces Red Cabbage shredded
- 12 ounces Vegetable Broth
- 4 grilled boneless, skinless Chicken Breasts or Chicken Thighs sliced into thin strips
- 10 tablespoons crushed Peanuts to serve
- 1 bunch Cilantro 8 - 10 sprigs, chopped, to serve
- 1 whole Lime cut into 4 - 6 wedges, to serve
Prepare Noodles & Company Indonesian Peanut Sauce according to the recipe linked to below. Set aside.
Prepare rice noodles according to package directions. Drain. Cool in ice bath. Drain again.
Place prepared rice noodles, broccoli, carrots, Napa cabbage and red cabbage in a large sauté pan. Place pan over high heat.
Once sizzling, add vegetable broth. Cook until almost completely dry.
Add prepared Noodles & Company Indonesian Peanut Sauce and grilled chicken strips. Toss to coat all ingredients and cook until heated through.
Place in serving bowl or bowls.
Sprinkle with peanuts and cilantro. Serve with a lime wedge or two.
