Yield: 1 Party Bowl
- 5 medium ripe Tomatoes roughly chopped
- 1/2 medium Red Onion roughly chopped
- 1/2 cup fresh Cilantro Leaves
- 1 medium Jalapeño seeded for less heat and roughly chopped
- 2 cloves Garlic peeled and minced
- Freshly squeezed juice of 1 Lime
- 1 teaspoon ground Cumin
- 1/2 teaspoon Smoked Paprika
- 1 teaspoon Kosher Salt to taste
- 1/4 teaspoon freshly ground Black Pepper to taste
- 1/4 cup Water to adjust for desired consistency
In a food processor or blender, combine chopped tomatoes, red onion, cilantro, jalapeño, garlic, lime juice, cumin, smoked paprika, salt and pepper. Pulse until the mixture reaches your desired consistency. For a chunkier salsa, pulse gently - for a smoother salsa, blend more thoroughly.
Taste.
Adjust the seasoning, adding more salt, lime juice, or cumin as needed.
If the salsa is too thick, add water a tablespoon at a time until it reaches your preferred consistency.
Transfer Salsa to a bowl, cover, and refrigerate for at least 30 minutes to allow the flavors to meld.
Serve chilled or at room temperature with tortilla chips, over tacos, or as a topping for your favorite dishes.
Store any leftovers in an airtight container in the refrigerator for up to 5 days.
