Ingredients

  • 1 cup coarsely chopped Parsley
  • 3 tablespoons Sherry or Red Wine Vinegar
  • 2 large cloves Garlic
  • 1 teaspoon crushed Red Pepper
  • Salt and freshly ground Black Pepper to taste
  • 1/2 cup Extra Virgin Olive Oil

Instructions

  • Add parsley, cilantro, vinegar, garlic and crushed red pepper to a food processor. Process to a rough paste.
  • Season with salt and pepper, to taste.
  • Place sauce in a bowl. Add olive oil. Mix well.
  • Allow to stand at least 20 minutes or refrigerate it overnight (allow to come to room temperature before serving).
