Ingredients

  • IHOP Buttermilk Pancake Batter (See "Related Recipes" above for a Link to this Recipe)
  • Butter or Oil to grease skillet
  • 1 1/2 cups Cheesecake Bites store bought or homemade, of choice, chopped into 1/2-inch pieces
  • 1 cup Graham Cracker Crumbs
  • 1 cup Strawberry Topping store bought or homemade, of choice
  • Whipped Cream for garnish

Instructions

  • Prepare IHOP Buttermilk Pancake batter according to the recipe in the Recipe Box above. Preheat a nonstick skillet or griddle over medium heat.
  • Lightly grease with butter or oil.
  • Pour about 1/3 cup buttermilk pancake batter into the pan for each pancake. Immediately sprinkle a few cheesecake bites pieces into the surface of the batter. Cook until bubbles appear and edges begin to set, about 2 - 3 minutes. Flip and cook another 1 - 2 minutes until golden brown and cheesecake pieces are nestled within.
  • Transfer pancakes to a warm plate and repeat until all batter and cheesecake bites are used.
  • Stack 4 warm pancakes on a plate.
  • Spoon generous strawberry topping over the top.
  • Dust with graham cracker crumbs for a nod to classic cheesecake crust.
  • Finish with a tall swirl of whipped cream.
  • Serve immediately and enjoy the decadent fusion of breakfast and dessert.
