Ingredients

  • 3 cups Complete Buttermilk Pancake Mix
  • 1 cup brewed Coffee cooled to room temperature
  • 1 cup Water
  • 1/4 cup Molasses
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon ground Ginger
  • 1/4 teaspoon ground Nutmeg
  • Cooking Oil Spray or other Non Stick Spray
  • Whipped Cream store bought or homemade, of choice, to garnish
  • Holiday Themed Candy Sprinkles to garnish
  • Syrup store bought or homemade, of choice, to serve

Instructions

  • In a medium-size mixing bowl, add pancake mix, coffee, water, molasses, cinnamon, ginger and nutmeg. Stir or mix together until a batter is formed. (The batter will be thin. Add more mix, 1 tablespoon at a time, for thicker pancakes, if you like.)
  • Spray a nonstick griddle or large frying pan with cooking oil spray.
  • Heat griddle to 375°F or place pan over medium heat.
  • When griddle or pan is hot, pour 1/4 cup batter for each pancake - do not crowd. Cook pancakes until bubbles appear and the edges start to dry, about 2 minutes. Flip pancakes, and cook until second side is golden brown, another 1 to 2 minutes.
  • Remove pancakes to a warm plate and cover loosely with foil or place in a warm, draft-free location. Repeat with the remaining batter.
  • Place 1 or more pancakes on each plate.
  • Top with whipped cream and sprinkle with sprinkles.
  • Serve with syrup.
