Ingredients

Sandwiches

  • 2 pounds Prime Rib thinly sliced (cooked medium rare, ideally)
  • 4 French Baguette Rolls or Hoagie Rolls
  • 4 tablespoons unsalted Butter softened
  • 8 slices Provolone Cheese or Swiss Cheese
  • Prepared Horseradish Sauce to dress (if desired)

Au Jus

  • 4 cups low sodium Beef Stock or Beef Broth
  • 1/4 cup dry Red Wine
  • 1 tablespoon Worcestershire Sauce
  • 2 cloves Garlic minced
  • 1 small Onion finely chopped
  • 1 teaspoon fresh Thyme or 1/2 teaspoon dried Thyme
  • Salt and freshly ground Black Pepper to taste

Instructions

Au Jus

  • In a medium saucepan, combine beef stock, red wine, Worcestershire sauce, garlic, onion, and thyme.
  • Place over medium heat. Bring mixture to a gentle boil, then reduce to a simmer. Cook for about 10 - 15 minutes, allowing flavors to meld together.
  • Strain mixture into a bowl.
  • Taste. Season with salt and pepper, to taste. Set aside and keep warm.

Toast Bread

  • Preheat your oven to 400°F (200°C).
  • Split rolls lengthwise, leaving one side slightly attached.
  • Spread softened butter on cut sides.
  • Place rolls on a baking sheet, buttered side up.
  • Place in preheated oven and toast until golden brown, about 5 minutes.
  • Remove buns from oven, but leave oven on.

Assemble Sandwiches and Serve

  • Lay sliced prime rib evenly across bottom halves of toasted rolls.
  • Add slices of provolone or Swiss cheese.
  • Place open sandwiches in oven for 2 - 3 minutes to warm meat and melt cheese.
  • Remove from oven.
  • Slather with horseradish sauce, if desired
  • Close sandwiches.
  • Serve immediately with small bowls of warm au jus for dipping.
