Ingredients

Chicken

  • 1 whole Chicken, cut into 8 pieces or about 3 1/3 pounds Chicken Pieces of choice
  • 3 cups All-Purpose Flour
  • 5 cups Canola Oil for frying

Marinade

  • 4 cups Buttermilk
  • 2 teaspoons Salt
  • 2 teaspoons freshly ground Black Pepper
  • 1 teaspoon Cayenne Pepper or Chili Powder

Instructions

  • In a large bowl, combine buttermilk, salt, black pepper and cayenne pepper or chili powder. Whisk until the ingredients are well incorporated.
  • Add cut chicken pieces to marinade, Turn to ensure they are fully coated.
  • Cover bowl and place in refrigerator to chill for at least 6 hours, ideally overnight, to let the chicken soak up the flavors.
  • After marinating, remove chicken from the fridge.
  • Preheat a deep skillet or fryer with canola oil to 350°F.
  • Prepare a basket lined with paper towels for draining the fried chicken.
  • In a large bowl, place the flour.
  • Remove each chicken piece from the marinade and dredge it in the flour, ensuring the coating is thick and covers all creases. Shake off any excess flour.
  • Fry chicken in batches, making sure not to overcrowd the pan.
  • Cook each piece for about 7 minutes on each side or until the chicken is golden brown and crispy.
  • Drain the fried chicken on the prepared paper towels.
  • Serve the fried chicken immediately with fries and a side of ketchup or your favorite dipping sauce.
