Ingredients

Tomato Sauce

  • 2 tablespoons Butter
  • 1 small Red Bell Pepper diced
  • 1 small Green Bell Pepper diced
  • 1 small Sweet Onion diced
  • 1 teaspoon minced Garlic
  • One 32-ounce can Whole Peeled Tomatoes
  • 1 Bay Leaf
  • 1/2 bunch fresh Thyme
  • 1/2 bunch fresh Basil
  • Salt and freshly ground Black Pepper to taste

Ancho Shrimp

  • 1/4 teaspoon Cayenne Pepper
  • 1/4 cup Spanish Paprika
  • 1 1/2 tablespoons Chili Powder
  • 1 1/2 tablespoons Garlic Powder
  • 1 1/2 tablespoons Ancho Powder
  • 2 tablespoons Brown Sugar
  • 1 pound Tiger Shrimp peeled, deveined and tails removed

Grits

  • 1/4 pound Stone-Ground Grits
  • 1 quart Vegetable Stock
  • 1 cup Heavy Cream
  • 1/4 pound Unsalted Butter
  • Salt and freshly ground Black Pepper to taste

Instructions

Tomato Sauce

  • Place butter into a medium skillet. Place over medium heat.
  • When butter has melted and is hot (do not burn), add bell peppers, onion and garlic. Cook, stirring, until translucent.
  • Crush tomatoes by hand and add to pot.
  • Add bay leaf, thyme and basil.
  • Simmer for 1 hour.
  • Remove bay leaf.
  • Taste. Add salt and pepper, to taste. (This can be done in advance. Store in a tightly sealed container, in the refrigerator, until ready to use. Warm before using.)

Shrimp

  • Combine all spices in a mixing bowl. (This can be done in advance. Store in a tightly sealed container until ready to use, up to 1 month.)
  • Place shrimp in large mixing bowl.
  • Coat liberally with prepared spice blend. Let set and marinate in refrigerator for 6 hours to overnight.
  • In sauté pan, sear each shrimp in vegetable oil on one side, flipping shrimp after 1 to 2 minutes.
  • Cover with tomato sauce, cooking in tomato sauce until shrimp are cooked through and sauce is hot. Remove from heat, set aside and keep warm.

Grits

  • Combine grits with vegetable stock. Soak for up to four hours or overnight.
  • Place grits into a medium sauce pot. Place over medium heat and cook, stirring often, until the grits have been hydrated and are cooked to your liking.
  • Add heavy cream and butter.
  • Taste. Add salt and pepper, to taste.

Serve

  • Spoon grits on each serving plate.
  • Spoon shrimp and tomato sauce over grits.
  • Serve hot.
