- 6 large Baking Potatoes peeled, cut in 1/2 -inch cubes
- 1 large Onion chopped
- 1 quart Chicken Broth
- 3 cloves Garlic minced or pressed
- 1/4 cup Butter
- 2 1/2 teaspoons Salt
- 1 teaspoon freshly ground Black Pepper to taste
- 1 cup Heavy Cream or 1 cup Half-and-Half
- 1 cup shredded Sharp Cheddar Cheese
- 3 tablespoons chopped fresh Chives
- 1 cup Sour Cream to serve
- 8 slices Bacon fried and crumbled, to serve
- Additional shredded Sharp Cheddar Cheese for sprinkling
In a large slow cooker, add the first 7 ingredients - prepared potatoes, onion, chicken broth, garlic, butter, salt and pepper.
Cover and cook on HIGH for 4 hours or LOW for 8 hours. Check - potatoes should be tender.
When done, mash mixture with a potato masher until potatoes are coarsely chopped and soupy is slightly thickened.
Stir in cream or half-and-half, 1 cup Cheddar cheese and chives.
Spoon hot soup into serving bowls.
Top with sour cream, if desired.
Sprinkle with bacon and additional cheese.
