- 2 tablespoons Tapioca
- 1 tablespoon sifted Flour
- 1 cup Sugar
- 1/8 teaspoon Salt
- 1/2 cup Cherry Juice drained from a #2 Can (20-ounces) Sour Pitted Cherries
- One #2 Can (20-ounces) Sour Pitted Cherries
- 1/4 teaspoon Almond Extract
- 1/2 teaspoon Red Food Coloring optional
- Unbaked Pie Shell store bought or homemade, of choice
Preheat oven to 400°F.
In a medium bowl, add tapioca, flour and sugar. Mix well.
Add salt, cherry juice, cherries, almond extract and food coloring, if using. Mix well.
Allow to stand for 15 minutes to thicken.
Pour into an unbaked pie shell. If desired, make a lattice top with strips of pastry and brush with butter.
Place pie on a baking sheet. Place in preheated oven. Bake for 10 minutes.
Then reduce heat to 350°F s and bake until the pie is set.
Serve warm with ice cream.
