Biscuits
- 2 cups All-Purpose Flour
- 1 tablespoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 6 tablespoons Unsalted Butter cold and cubed
- 3/4 cup Whole Buttermilk cold
Sausage Gravy
- 1 pound Mild or Spicy Breakfast Sausage
- 1/4 cup All-Purpose Flour
- 2 1/2 cups Whole Milk
- 1/2 teaspoon freshly ground Black Pepper to taste
- Salt to taste
Biscuits
Preheat oven to 425°F.
Line a baking sheet with parchment.
In a large bowl, whisk 2 cups flour, baking powder, baking soda and 1/2 teaspoon salt.
Cut in cold butter with a pastry cutter or fork until mixture resembles coarse crumbs.
Pour in cold buttermilk. Stir just until dough comes together.
Turn dough onto floured surface. Gently pat to 1-inch thickness. Fold once or twice.
Cut out biscuits.
Place biscuits close together on baking sheet.
Place in preheated oven and bake 12 - 14 minutes until golden.
Sausage Gravy
While biscuits are baking, cook sausage in a skillet over medium heat, breaking into crumbles until browned.
Sprinkle in 1/4 cup flour. Stir and cook 1 - 2 minutes to form a roux.
Gradually add milk, stirring constantly until thickened, 5 - 7 minutes.
Taste. Season with black pepper and salt, to taste.
