Ingredients

Biscuits

  • 2 cups All-Purpose Flour
  • 1 tablespoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 6 tablespoons Unsalted Butter cold and cubed
  • 3/4 cup Whole Buttermilk cold

Sausage Gravy

  • 1 pound Mild or Spicy Breakfast Sausage
  • 1/4 cup All-Purpose Flour
  • 2 1/2 cups Whole Milk
  • 1/2 teaspoon freshly ground Black Pepper to taste
  • Salt to taste

Instructions

Biscuits

  • Preheat oven to 425°F.
  • Line a baking sheet with parchment.
  • In a large bowl, whisk 2 cups flour, baking powder, baking soda and 1/2 teaspoon salt.
  • Cut in cold butter with a pastry cutter or fork until mixture resembles coarse crumbs.
  • Pour in cold buttermilk. Stir just until dough comes together.
  • Turn dough onto floured surface. Gently pat to 1-inch thickness. Fold once or twice.
  • Cut out biscuits.
  • Place biscuits close together on baking sheet.
  • Place in preheated oven and bake 12 - 14 minutes until golden.

Sausage Gravy

  • While biscuits are baking, cook sausage in a skillet over medium heat, breaking into crumbles until browned.
  • Sprinkle in 1/4 cup flour. Stir and cook 1 - 2 minutes to form a roux.
  • Gradually add milk, stirring constantly until thickened, 5 - 7 minutes.
  • Taste. Season with black pepper and salt, to taste.

Serve

  • Split warm biscuits. Spoon sausage gravy over top.
  • Serve immediately, hot.
