Ingredients

  • 4 White Fish Fillets such as Cod, Pollock or Tilapia
  • 1 cup Buttermilk
  • 1 teaspoon Hot Sauce
  • 1 cup All-Purpose Flour
  • 1 cup Cornmeal
  • 1 tablespoon Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon freshly ground Black Pepper to taste
  • 1/2 teaspoon Cayenne Pepper
  • Vegetable Oil for frying
  • 4 Soft Sandwich Buns
  • Dill Pickle Slices
  • 1/2 cup Tartar Sauce store bought or homemade (there are many Good Ones on this Site (See Links Below to Make Some), of choice

Instructions

  • In a shallow bowl, combine buttermilk and hot sauce.
  • Submerge the fish fillets in mixture. Place bowl in the refrigerator and marinate for 30 minutes to an hour.
  • In a separate bowl, add flour, cornmeal, paprika, garlic powder, onion powder, salt, black pepper and cayenne.
  • Pour about 1 inch vegetable oil in a heavy skillet or deep frying pan.
  • Place over medium high heat and heat to 350°F (175°C).
  • Remove marinated fish fillets from buttermilk, allowing excess to drip off, and place in flour mixture. Dredge fillets, turning to ensure each piece is well-coated.
  • Carefully place coated fillets in the hot oil. Fry 3 - 4 minutes per side, or until golden brown and crispy. Remove and drain on a paper towel-lined plate.
  • Lightly toast sandwich buns in a dry skillet or toaster.
  • Spread tartar sauce on the bottom bun.
  • Add a fried fish fillet.
  • Top with pickle slices.
  • Place the top bun on the sandwich and serve immediately.
