Prepare Chevys Fresh Mex Jalapeño Jelly according to the recipe in the Recipe Box below. Set aside.
Preheat oven to 350°F.
Wrap tortillas tightly in foil.
Place in preheated oven and heat bout 10 minutes or until heated through. Remove from oven and set aside.
Pour 1 teaspoon oil into a medium skillet. Place over medium heat.
When oil is hot and shimmering, add onion and garlic. Sauté until tender.
Stir in chicken, black beans, 1/2 cup salsa, cheese and 2 tablespoons cilantro or oregano. Stir until cheese melts.
Remove from heat.
Spoon about 1/2 cup of filling across a warm tortilla, to about 1-1/2 inches of one edge.
Roll up tortilla as tightly as possible. Secure with a wooden toothpick.
Repeat with remaining tortillas and filling.
In a very large, deep skillet, heat 1 - 1/2 inches of cooking oil to 365°F.
Carefully place flautas, two at a time in hot oil and fry for 2 to 3 minutes or until crisp and golden brown, turning once.
Remove flautas to a paper towel-covered plate to drain. Keep fried flautas warm in a 300°F oven while frying remaining flautas.
Remove toothpicks.
Cut flautas n 1/2 crosswise.
Spread shredded lettuce on a serving platter.
Place flautas on top of lettuce.
Sprinkle with cilantro.
Serve hot with prepared Chevys Fresh Mex Jalapeño Jelly, guacamole, salsa and sour cream.
