Ingredients

  • Chevys Fresh Mex Jalapeño Jelly (See the Recipe Box below for this Recipe)
  • Six 10-inch Flour Tortillas
  • 1/2 cup chopped Onions
  • 1 clove Garlic peeled and minced
  • 1 teaspoon cooking Oil
  • 2 cups shredded cooked Chicken
  • 1 cup canned Black Beans rinsed and drained
  • 1/2 cup Salsa store bought or homemade, of choice
  • 1/2 cup shredded Mexican Blend Cheese
  • 2 tablespoons snipped fresh Cilantro or 2 tablespoons Oregano
  • Cooking Oil for frying
  • 3 cups shredded Lettuce
  • More Cilantro to serve
  • Guacamole store bought or homemade, of choice, to serve
  • More Salsa store bought or homemade, of choice, to serve
  • Sour Cream to serve

Instructions

  • Prepare Chevys Fresh Mex Jalapeño Jelly according to the recipe in the Recipe Box below. Set aside.
  • Preheat oven to 350°F.
  • Wrap tortillas tightly in foil.
  • Place in preheated oven and heat bout 10 minutes or until heated through. Remove from oven and set aside.
  • Pour 1 teaspoon oil into a medium skillet. Place over medium heat.
  • When oil is hot and shimmering, add onion and garlic. Sauté until tender.
  • Stir in chicken, black beans, 1/2 cup salsa, cheese and 2 tablespoons cilantro or oregano. Stir until cheese melts.
  • Remove from heat.
  • Spoon about 1/2 cup of filling across a warm tortilla, to about 1-1/2 inches of one edge.
  • Roll up tortilla as tightly as possible. Secure with a wooden toothpick.
  • Repeat with remaining tortillas and filling.
  • In a very large, deep skillet, heat 1 - 1/2 inches of cooking oil to 365°F.
  • Carefully place flautas, two at a time in hot oil and fry for 2 to 3 minutes or until crisp and golden brown, turning once.
  • Remove flautas to a paper towel-covered plate to drain. Keep fried flautas warm in a 300°F oven while frying remaining flautas.
  • Remove toothpicks.
  • Cut flautas n 1/2 crosswise.
  • Spread shredded lettuce on a serving platter.
  • Place flautas on top of lettuce.
  • Sprinkle with cilantro.
  • Serve hot with prepared Chevys Fresh Mex Jalapeño Jelly, guacamole, salsa and sour cream.
