Ingredients

Slaw Mix

  • 1 small Green Cabbage finely shredded
  • 1 small Red Cabbage finely shredded
  • 1 large Carrot julienned or grated

Dressing

  • 1/2 cup Mayonnaise
  • 2 tablespoons Buttermilk
  • 1 tablespoon Apple Cider Vinegar
  • 1 tablespoon fresh Lemon Juice
  • 1 tablespoon Dijon Mustard
  • 1 1/2 tablespoons Honey
  • 1 teaspoon Celery Seed
  • 1/2 teaspoon Kosher Salt or to taste
  • 1/2 teaspoon freshly ground Black Pepper or to taste

For Serving

  • Chopped Fresh Parsley for garnish

Instructions

  • In a large mixing bowl, combine shredded green cabbage, red cabbage and julienned carrots. Toss well to distribute evenly. Set aside.
  • In a separate bowl, add mayonnaise, buttermilk, apple cider vinegar, lemon juice, Dijon mustard and honey. Whisk until smooth.
  • Stir in celery seed, salt and black pepper. Taste and adjust seasoning as needed.
  • Pour prepared dressing over cabbage mixture. Toss thoroughly to coat all the vegetables in the dressing.
  • Cover and refrigerate for at least 1 hour to allow flavors to meld and the slaw to soften slightly.
  • Stir slaw once more before serving.
  • Garnish with fresh parsley.
