Carrabba's Italian Grill Roasted Red Pepper Sauce Recipe

Ingredients

  • 1 tablespoon Butter
  • 1 Red Bell Pepper cored, seeded and sliced thin
  • Red Onion sliced thin
  • 1 cup Chicken Broth
  • 1 cup White Wine
  • 2 cups Heavy Cream
  • 1 stick (1/2 cup) Unsalted Butter
  • Salt and freshly ground Black Pepper to taste

Instructions

  • Place 1 tablespoon butter into a medium skillet. Place over medium heat.
  • When butter has melted and is hot (do not burn), place prepared red bell pepper and onion in skillet. Sauté until tender and fragrant.
  • Remove pepper and onion from skillet to a cutting board. Chop fine.
  • Place back in skillet. Add chicken broth and wine. Cook over medium heat until thickened.
  • Add heavy cream. Cook and reduce to 3/4.
  • Taste. Add salt and pepper, to taste.
  • Add 1 stick unsalted butter. Melt and stir.
  • Remove from skillet and set aside.
  • Can be done in advance. Place in a sealable container and place in the refrigerator for up to a week. Warm before serving.
