Ingredients

Red Bell Pepper
cored, seeded and sliced thin
Red Onion
sliced thin

Chicken Broth

White Wine

Heavy Cream

stick (1/2 cup) Unsalted Butter
Salt and freshly ground Black Pepper
to taste
Instructions
Place 1 tablespoon butter into a medium skillet. Place over medium heat.
When butter has melted and is hot (do not burn), place prepared red bell pepper and onion in skillet. Sauté until tender and fragrant.
Remove pepper and onion from skillet to a cutting board. Chop fine.
Place back in skillet. Add chicken broth and wine. Cook over medium heat until thickened.
Add heavy cream. Cook and reduce to 3/4.
Taste. Add salt and pepper, to taste.
Add 1 stick unsalted butter. Melt and stir.
Remove from skillet and set aside.
Can be done in advance. Place in a sealable container and place in the refrigerator for up to a week. Warm before serving.
