Ingredients

Filling

  • 2 cups Shredded Rotisserie Chicken
  • 1/2 cup Ricotta Cheese
  • 1/2 cup Mascarpone Cheese
  • 1/2 cup Grated Parmesan Cheese
  • 1/2 cup Sautéed Mushrooms finely chopped
  • 1/4 cup Diced Onion sautéed until tender
  • 1/4 cup Diced Celery sautéed until tender
  • 1/4 cup Diced Carrot sautéed until tender
  • 2 tablespoons Chopped Fresh Basil
  • 1 Garlic Clove minced
  • 1/2 teaspoon Italian Seasoning
  • Salt and Freshly Ground Black Pepper to taste

Sauce

  • 1 1/2 cups Marinara Sauce
  • 1/2 cup Heavy Cream
  • 1/4 cup Red Wine

Assembly

  • 12 Cannelloni Shells parboiled, if required
  • 1 1/2 cups Shredded Mozzarella Cheese
  • 1/4 cup Grated Parmesan Cheese
  • Fresh Basil for garnish

Instructions

  • Preheat oven to 350°F.
  • Lightly grease a 9 x 13-inch baking dish.

Filling

  • In a mixing bowl, combine chicken, ricotta, mascarpone cheese, parmesan cheese, sautéed mushrooms, sautéed onions, sautéed celery, sautéed carrots, basil, garlic and Italian seasoning. Stir to mix completely and evenly.
  • Season with salt and pepper, to taste.

Sauce

  • In a separate bowl, add marinara sauce with heavy cream and red wine. Whisk until smooth.

Assembly and Baking

  • Fill each prepared cannelloni shell generously with chicken mixture using a piping bag or small spoon.
  • Arrange in prepared baking dish in a single layer.
  • Pour prepared sauce evenly over the stuffed shells, ensuring full coverage.
  • Sprinkle mozzarella cheese and parmesan cheese over the top.
  • Cover dish with foil.
  • Place covered dish in preheated oven. Bake for 30 minutes.
  • Remove foil and bake uncovered for another 10 - 15 minutes until bubbly and golden.
  • Remove from oven and let rest 5 minutes before garnishing with fresh basil and serving.
