- 4 ounces Bonefish Grill Lemon Butter Sauce (See the Recipe Box below for this Recipe) See the Recipe Box below for this Recipe
- Four 8-ounce Salmon Fillets
- 4 ounces Olive Oil divided use
- Salt as needed
- 4 cups raw Spinach
- 4 cloves Garlic minced
- 8 ounces crumbled Gorgonzola Bleu Cheese
- 4 tablespoons cooked and crumbled Bacon
Prepare Bonefish Grill Lemon Butter Sauce according to the recipe in the Recipe Box below. Set aside.
Preheat oven to 350°F (Even if you plan to cook the fillets another way).
Rub salmon fillets with 2 ounces olive oil.
Season lightly with salt.
Cook or grill salmon to desired doneness.
Pour 2 ounces olive oil into a medium skillet. Place over medium heat.
When oil is hot and shimmering, add spinach, garlic and a pinch of salt. Sauté until spinach has wilted. Remove from heat.
Place cooked salmon on an ovensafe cooking dish or pan.
Pile sautéed spinach evenly over each filet.
Sprinkle crumbled Gorgonzola cheese evenly over spinach.
Place in preheated oven and cook until the cheese begins to melt.
Place each filet on a serving plate.
Spoon prepared Bonefish Grill Lemon Butter Sauce over all.
Scatter with bacon crumbles.
Serve hot.
