Ingredients

  • 4 ounces Bonefish Grill Lemon Butter Sauce (See the Recipe Box below for this Recipe) See the Recipe Box below for this Recipe
  • Four 8-ounce Salmon Fillets
  • 4 ounces Olive Oil divided use
  • Salt as needed
  • 4 cups raw Spinach
  • 4 cloves Garlic minced
  • 8 ounces crumbled Gorgonzola Bleu Cheese
  • 4 tablespoons cooked and crumbled Bacon

Instructions

  • Prepare Bonefish Grill Lemon Butter Sauce according to the recipe in the Recipe Box below. Set aside.
  • Preheat oven to 350°F (Even if you plan to cook the fillets another way).
  • Rub salmon fillets with 2 ounces olive oil.
  • Season lightly with salt.
  • Cook or grill salmon to desired doneness.
  • Pour 2 ounces olive oil into a medium skillet. Place over medium heat.
  • When oil is hot and shimmering, add spinach, garlic and a pinch of salt. Sauté until spinach has wilted. Remove from heat.
  • Place cooked salmon on an ovensafe cooking dish or pan.
  • Pile sautéed spinach evenly over each filet.
  • Sprinkle crumbled Gorgonzola cheese evenly over spinach.
  • Place in preheated oven and cook until the cheese begins to melt.
  • Place each filet on a serving plate.
  • Spoon prepared Bonefish Grill Lemon Butter Sauce over all.
  • Scatter with bacon crumbles.
  • Serve hot.
