Ingredients

  • 2 skinless Pineapple Wedges
  • 1/2 ounce Vanilla Syrup
  • 1 1/4 ounces Malibu Rum or other Coconut Rum of choice
  • 1/2 ounce St. Germain Elderflower Liqueur or other Elderflower Liqueur of choice
  • 1/2 ounce freshly squeezed Lemon Juice
  • 1 Pineapple Wedge with Skin

Instructions

  • Drop 2 skinless pineapple wedges into a pint glass or shaker.
  • Add vanilla syrup. Muddle until all the pineapple is broken up.
  • Pack glass or shaker with ice.
  • Add rum, elderflower liqueur and lemon juice.
  • Shake well.
  • Strain cocktail - or double strain, if you are able - into a frozen martini glass.
  • Garnish with 1 pineapple wedge with skin on the side of the martini glass.
