- 1 pound Baby Carrots
- 1/4 cup Water
- 4 tablespoons Unsalted Butter
- 1/3 cup Dark Brown Sugar
- 1 teaspoon White Sugar
- 1/4 teaspoon Salt
- 1/4 teaspoon freshly ground Black Pepper to taste
- 1 tablespoon chopped fresh Parsley
Place butter into a medium skillet. Place over medium heat.
When butter has melted and is hot (do not burn), add baby carrots, water, dark brown sugar, white sugar, salt and black pepper to the pan. Stir to combine all ingredients thoroughly.
Bring the mixture to a gentle boil. Reduce heat to low, cover and simmer for 15 - 20 minutes, or until carrots are tender.
Remove the lid and increase heat to medium-high. Continue cooking, stirring occasionally, until the liquid reduces to a glaze consistency, about 5 minutes.
Remove from heat.
Transfer glazed carrots to a serving dish and sprinkle with chopped parsley. Serve warm.
