Yield: 1 Large Bowl
- 1/2 cup fine Peanut Oil
- 1/2 cup Raw Peanuts
- 2 fresh Serrano or Fresno Chilies
- 1 tablespoon chopped fresh Ginger
- 4 cloves Garlic
- 1/2 cup Rich Unsweetened Coconut Milk
- 1 teaspoon Dark Soy Sauce
- 1 tablespoon Fish Sauce
- 1 teaspoon Sugar
- 1 tablespoon freshly squeezed Lime Juice
- 1 teaspoon kosher Salt
- 1/2 cup chopped fresh Cilantro Leaves
Pour peanut oil in a small pot. Place over medium high heat and heat until nearly smoking. Turn off the heat and immediately add peanuts. Cook to a light golden color, about 3 - 5 minutes.
Remove with a slotted spoon and place in a food processor or blender.
Add a tablespoon of the cooking oil, reserving the rest.
Grind to a rough paste.
Add chilies, ginger and garlic. Continue to blend.
Add coconut milk, soy sauce, fish sauce, sugar, lime juice, and salt. Blend until smooth. Remove dipping sauce to a small mixing bowl.
Stir in the cilantro leaves.
Add 1/2 of the reserved oil or more, to desired consistency.
Pour into serving or dipping bowls.
