- 3 tablespoons Cajun Seasoning store bought or homemade, of choice
- Freshly squeezed Juice of 1 Lime
- 1 - 3 fresh Jalapeños seeded, ribs removed and minced
- 1 tablespoon Vegetable Oil
- 1 pound medium Shrimp (30 - 40 per pound) peeled, deveined and tails removed
- Grilled Zucchini, Tomatoes, Onions and Red Peppers to serve
Add Cajun seasoning, lime juice, jalapeños and vegetable oil to a resealable plastic bag. Shake to mix well.
Add shrimp. Shake to coat fully with the marinade.
Squeeze out excess air, and seal the bag. Place in refrigerator to marinate for 20 minutes.
Preheat an outdoor grill for medium heat. Lightly oil the grate.
Remove the shrimp from the marinade, and shake off excess. Discard the remaining marinade and the bag.
Cook shrimp on the preheated grill until bright pink on the outside and meat is no longer transparent in the center, about 2 minutes per side.
Remove shrimp from grill and toss with hot grilled zucchini, tomatoes, onions and red peppers.
Serve hot.
