Ingredients
2 1/2ouncesBrown Sugar
1tablespoonRice Vinegar
1cloveGarliccrushed
1small fresh Red Chilifinely chopped
1tablespoonchopped Coriander Leaves
1/3cupfreshly squeezed Lime Juice
Salt and freshly ground Black Pepperto taste
Instructions
In a small frying pan add brown sugar and vinegar.
Place over low heat and cook, stirring constantly, until sugar dissolves.
Remove from heat and allow to cool.
Once cooled, add garlic, chili, coriander and lime juice. Mix well.
Taste. Add salt and pepper, to taste.
This can be done in advance. Store in a tightly sealed container, in the refrigerator, until ready to use up to a month. Store leftover sauce the same way.
