Ingredients

  • 2 1/2 ounces Brown Sugar
  • 1 tablespoon Rice Vinegar
  • 1 clove Garlic crushed
  • 1 small fresh Red Chili finely chopped
  • 1 tablespoon chopped Coriander Leaves
  • 1/3 cup freshly squeezed Lime Juice
  • Salt and freshly ground Black Pepper to taste

Instructions

  • In a small frying pan add brown sugar and vinegar.
  • Place over low heat and cook, stirring constantly, until sugar dissolves.
  • Remove from heat and allow to cool.
  • Once cooled, add garlic, chili, coriander and lime juice. Mix well.
  • Taste. Add salt and pepper, to taste.
  • This can be done in advance. Store in a tightly sealed container, in the refrigerator, until ready to use up to a month. Store leftover sauce the same way.
