Ingredients

  • 1 Pizza Dough or Pizza Shell store bought or homemade, of choice
  • 1 cup mild Salsa of choice
  • 1 or more, to taste Chipotle Chiles in Adobo Sauce, chopped
  • 1 tablespoon or more, to taste Adobo Sauce, from jar
  • 1 - 2 cups cooked shredded Chicken
  • 1/4 cup chopped Onion
  • 1/2 cup chopped Red Bell Pepper
  • 1/2 cup chopped Green Bell Pepper
  • 1 1/2 cups Mexican Blend Cheese
  • 1/2 cup Corn and Black Bean Salsa of choice
  • 2 tablespoons chopped Cilantro
  • 1/3 cup Sour Cream
  • 1 tablespoon freshly squeezed Lime Juice

Instructions

  • Preheat oven to as high as it will go.
  • Prepare and/or precook pizza dough or pizza shell according to instructions in recipe or on package.
  • When dough or shell are ready, place on a greased pizza pan.
  • In a small bowl, add salsa, chipotle chile and adobo sauce. Mix well. Spread evenly on dough or shell.
  • Top with chicken.
  • Scatter onion and peppers over chicken.
  • Sprinkle with Mexican cheese blend.
  • Place pizza in preheated oven. Bake according to dough or shell directions, if any, or until crust is golden brown and cheese is melted.
  • Remove from oven.
  • Mound corn and black bean salsa on center of pizza.
  • Sprinkle with cilantro.
  • In a small bowl, add lime juice and sour cream. Mix well. Drizzle over pizza.
  • Allow pizza to rest for 5 minutes before slicing.
  • Slice and serve hot.
