Ingredients

  • 2 tablespoons Butter divided use
  • 1/2 cup Onions chopped fine
  • 1/2 cup Celery chopped fine
  • 1 tablespoon Garlic minced
  • 1/2 cup Red Bell Peppers cored, seeded and chopped fine
  • 1/2 cup Flour
  • 2 tablespoons Bacon Grease
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Cayenne Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon White Pepper
  • 1 teaspoon dried Oregano
  • 1 teaspoon dried Thyme
  • 1/2 pound cooked and crumbled Ground Beef
  • 1 cup Veal Stock
  • 1 tablespoon Worcestershire Sauce
  • 1 tablespoon Tabasco Sauce, or other Louisiana-Style Hot Sauce of choice

Instructions

  • Add 1 tablespoon butter to a large skillet. Place over medium heat.
  • When butter has melted and is hot (do not burn), add diced onions, celery, garlic and red bell peppers. Sauté 2 - 3 minutes, until fragrant. Remove the sautéed veggies from the skillet to a bowl and set aside.
  • Return pan to heat (do not clean).
  • To the same skillet, add 1 tablespoon butter, flour and bacon grease. Allow butter and grease to melt. Cook, stirring constantly, until mixture has a thickened, brown texture.
  • Add sautéed veggies back into the pan. Stir well and cook for an additional 2 - 3 minutes.
  • Add cumin, paprika, cayenne pepper, garlic powder, celery salt, white pepper, oregano and thyme. Bring the mixture to a boil. Cook, stirring, until the gravy starts to thicken.
  • Reduce heat to a simmer.
  • Add cooked ground beef, veal stock, Worcestershire sauce and Tabasco sauce. Cook until thickened to desired consistency.
  • Serve hot.
